Water: H2O. A polar (ε = 80) protic solvent. Although it contains a hydroxyl group, water is not an alcohol because the hydroxyl group is not bonded to a carbon atom. In its solid phase water is called ice. In its gas phase water is called water vapor. Steam is not gas phase water, but rather tiny droplets of liquid water.
