High fructose corn syrup: A sweetener produced by enzymatic processing of corn syrup to isomerize some of the glucose (an aldohexose carbohydrate) into fructose (a ketohexose carbohydrate). As a sweetener, high fructose corn syrup is more economical than sucrose and therefore has been widely used in processed foods and beverages.
